You can’t go wrong with spinach, right? Well apparently yes you can if you prepare it the wrong way.

Cooking leafy green vegetables such as spinach breaks down all the antioxidants, but making it into a tasty milkshake helps release it’s powerful nutrient – Lutein.

Cooking spinach destroys Lutein, a previous study found that lutein helps reduce the risk of heart attacks and prevents eye damage. Researchers at the University of Lynchburg in Sweden tested different ways to cook the baby spinach they bought from a local grocery store to see how it’s food content changes.

They then measured levels of lutein, concluding that the best way to eat spinach is to cut and eat raw with dairy products. “It is best not to heat spinach at all,” said Dr. Rosanna Chung. The best is to make juice from it and add fat dairy products such as cream, milk or yogurt. ”

“When spinach is cut into small pieces, the leaves produce more Lutein, and fat increases the solubility of Lutein to dissolve in the liquid,” she said. Scientists pointed out that the more Lutein dissolves in the shake, the more the body absorbs it.

Cooking spinach for a long time at high temperatures, such as in Lasagna, is the most harmful way to prepare it.
